Rounded edges, dark/transparent context menus, mirrored dock, no more brushed metal or pin stripes. The last two of which are one of the UI things they intentionally worked on, making it look consistent. Which I would surely hope they would at least attempt to make it look uniform before going about changing it all together. But largely these "changes" are all aesthetic. So what's it matter, it doesn't really make it any easier to use. Except for having darker options makes it easier to use in the dark. Besides, i thought they'll be going the darker route with the interface, knowing that Snow Leopard now sports darker shades of gray and even black for the dock menus etc. Now, iTunes 9 when opened side by side with other windows is out of place.
