the easiest one to open the file in the default application will be double clicking on the file itself while you preview through Quick look. :)

What about the opposite? When you click on an item in a dock folder/stack, it opens using its default program. Is there a way to go from that to quick look?

Actually, this isn't a quick look shortcut; it's a finder shortcut and has worked since the inception of OS X.

You can also use Command + O

Cheers!
