Some ibooks do not show a theme option under the aA icon. I would like to be sure that my book does. But I can't find where an author should ensure that the option is included. Any advice?

Thanks for this tips but doesn't solve my problem which using iBooks mainly for reading PDF files.
I have another fix though. :-)
- Enabling "White on Black" through triple-clicking the Home button.

Steps:
Setting > General > Accessibility
Select "Toggle White on Black" for the last option - Triple-click Home.

Next time when opening iBooks or Safari for bed-time reading and don't want to hurt your eyes too much. Rapidly tap the Home button 3 times and viola! :-)

Call me crazy but I think this is less necessary on iPad 3 because the screen is so much more yellow to begin with. Check out some of the pictures, it really is this stark a difference!
