If you no longer wish to be enrolled in the beta program you can leave the iOS /iPadOS 15 beta via Settings, doing so will remove the beta profile from the device and allow you to only update to final stable builds as they become available.
macOS Monterey is said to be available in the fall.
iOS 15.1 and iPadOS 15.1 will likely debut this fall as well after several beta versions have been tested thoroughly.
