You’ll be able to set a new passcode during the set-up process.

There’s one other way that you can use to reset your Apple Watch and this doesn’t require your iPhone. That’s right, you can perform this directly on your Apple Watch. Simply press and hold the side button on your Apple Watch to bring up the shutdown screen. Here, force press on the Power Off slider and you’ll get the option to erase all content and settings. Once the Apple Watch is erased, you’d have to set it up from a backup again.

Resetting a passcode on Apple Watch is a bit different from the process of resetting other forgotten passwords on other Apple devices, but the end result is the same in that you’ll regain access to your device when you go through the whole process.

or before you erase the content, you can try to unpair first your Apple Watch and it will request you to sign out your Apple ID acct, to prevent activation lock in your Apple Watch when you attempt to pair it again. anyway when you unpair the apple watch to your iPhone it will automatically restore to its factory setting.
